HEAD CHEF

AM Lodge is looking for an experienced Fine dining Head Chef with a 5-Star Lodge Safari Game Reserve exposure. The position will be on a fixed-term basis located in Hoedspruit. The incumbent will be responsible for managing the kitchen at large, aiding with menu preparations, ensuring food quality and freshness, and monitoring ordering and stocking. Ensures that the standard and quality of all kinds of food offered by AM Lodge are always maintained at the highest level.

KEY DELIVERABLES:

KITCHEN OPERATIONS

  • Prepare weekly/monthly recipes and menus or as when required.
  • Preparing food items as per the set ingredients on the menu with great quality per the prescribed menus and the standard of a 5-star.
  • Ensuring that the company’s standard requirements in terms of food excellence are always maintained.
  • Creating menus and menu items as per operational requirements. Creating new ideas and implementing upgrades is an integral part of your position.
  • Train all AM Luxury and AM Manyeleti Restaurant kitchen staff on the menu, preparations, and plating of the meals.
  • Ensure staffing levels are scheduled.
  • Maintain quality of receiving and presenting of food (Draft SOP)
  • Engage with all guests regarding feedback on service and food presentation.
  • Respond to guest complaints and compliments.
  • Set and monitor performance standards.
  • Ensure compliance with food handling and standards.
  • Ensuring that the chefs in the kitchen maintain the required standards in terms of food preparation, menu compilations, and general operating procedures.

CLEANLINESS, HYGIENE & FOOD SAFETY

  • Keep the kitchen neat and ensure that food hygiene practices are always upheld.
  • Ensure that you abide by the health and safety rules and regulations and South African laws.

INVENTORY MANAGEMENT

  • Ensures that there is always sufficient food stock; conducts frequent stock takes and planning.
  • Request required stock by submitting a list to the General Manager on time as per the shopping schedule.
  • Monitor stock to ensure that food is not wasted and report any malfunctions.
  • Ensure that the ordered stock/goods are received as required, in good condition, and stored correctly.
  • Monitor and record inventory, and if necessary, order new supplies.
  • Ensure that the General Manager is consulted regarding stock, wares, wines, and liquors, as per revenue allocations at AM Lodge.

CUSTOMER SERVICE

  • Drive service standards in the kitchen so that all customers are treated to the very best service.
  • Continually monitor and review customer feedback and take appropriate.

             action to rectify adverse queries and trends identified.

  •  Identify gaps and action improvements in the existing systems and processes for efficiency.

GENERAL

  • Perform any other duty as per operational requirements, and management’s discretion, on the condition that it is lawful.

JOB REQUIREMENTS

Minimum Qualification requiredExperience & Knowledge
-Must have matric/equivalent Relevant Degree.
-Relevant, Degree/Diploma in Hospitality Management/ Culinary
-Driver’s License  
– First Aid 1,2/3 would be an added advantage.  
-Minimum of 5 years or more experience as a Head Chef and within the culinary industry.
-Must have inventory management experience and cost analysis experience.
-Must have Menu and culinary knowledge and abilities.   -Must have a passion for food and beverage service.
-Experience in Afro- Fusion would be an added advantage.
